Cassava (Manihot esculenta) Family Euphorbacea

cassavaAttractive, semi-deciduous perennial growing to two metres tall. Fast-growing and hardy in all soil types. Grown for large edible tubers that must be peeled and cooked before eating. Leaves are also edible when cooked and are high in protein.

    Simple recipes for cassava: 1. Chips – fried or baked. Flavour with curry spices and cook to your liking. Other flavourings can be used to your taste. 2. Sop Sop – Traditional Torres Strait Island Dish Peel and prepare a number of root vegetables ie. cassava, sweet potatoes, yam, pumpkin, cooking banana/s, etc. Cut vegetables into rustic chunks, place in either saucepan or casserole, cover with coconut milk (canned or powdered) and cook on low heat until tender. Sop Sop can be eaten hot or cold as a side dish or as a dessert with drizzled honey or sugar sprinkles.
